Abstract

Daun kelor (Moringa olifera) banyak dibudidayakan di Indonesia karena banyak manfaatnya sebagai nutrien esensial. Dalam penelitian ini, mengevaluasi kandungan protein, profil asam amino, dan kecernaan protein daun kelor. Konsentrat protein diperoleh dengan ektraksi basa dan asam yang mengendap pada titik isoelektrik. Jumlah endapan dipengaruhi (P<0,01) oleh kombinasi pH larutan NaOH dan pH buffer fosfat, tertinggi pada NaOH pH 8 dan buffer fosfat pH 7 (35,102 mg/g daun kelor). Konsentrat protein daun kelor memiliki kandungan protein 65,51% dengam asam amino esensial tertinggi leusin (67,50 mg/g protein), sedangkan asam amino non-esensial adalah asam aspartat, glutamin, dan glisin (67,90; 79,00; 73,60 mg/g protein) dengan kecernaan 70,48%. Penelitian ini menunjukkan bahwa konsentrat protein daun kelor yang diuji dapat sebagai sumber protein bahan pakan setara dengan bungkil kedelai.
